Bloater (herring)

Bloaters are a type of smoked herring. They are different from the kippers as they are smoked whole, with its innards intact which gives it its unique gamey flavour.[1] The bloater is associated with Great Yarmouth, England; the kipper with Scotland and the Isle of Man (i.e., the Manx kipper).[1] According to George Orwell in The Road to Wigan Pier, the Emperor Charles V erected a statue to the inventor of bloaters.[2] They are given the name "bloater" since they are swelled, or "bloated" in preparation.[3]
